Long and Slow (at least 14 hours) for the best quality, flavor, & texture. Low temperature… slow cooking produces the “pink” smoke ring; which is where the true smoke flavor comes from. We smoke our meats daily which is why we may occasionally run out! All orders are prepared as you wait, or you may telephone your order in ahead. Thank you for supporting our family BBQ.
